Description:
Malic acid is an organic compound with the molecular formula C4H6O5. It contributes to the pleasantly sour taste of fruits, and is used as a food additive. Malic acid has two stereoisomeric forms(L- and D-enantiomers), though only the L-isomer exists naturally. Malic acid has a strong hygroscopic, soluble in water and ethanol.

Application

1 Food production: The taste of L-malic acid is most close to the natural apples sour. Compared with citric acid, the acidity of L-malic aid is about 1.2 times that of citric acid, but the taste is soft(with high buffering index), with special flavor, with lower calorie, so it can be used in alcohol, beverage, jam, chewing gum and some other foods. It also has preservative and bacteria inhibition function. So it is a new generation food acidulant. So now L-malic acid is one of the compound organic acids with the largest consumption and most promising prospect in food production.

2 Pharmaceutical industry: L-macli acid is utilizable for organism. In metabolism, it is good for amino acid absorbing and no fat accumulating. Used in amino acid injection, it can increase amino acid usage ratio. This is very important for frail patients after operation and patients with hepatic dysfunction.

3 Tobacco industry:  Malic acid derivatives can improve tobacco flavors..

4 Daily-use chemical industry: salts of malic acid used in tooth paste is anti dental calculus agent and resisting bacterium speckle.
