Sodium citrate is the sodium salt of citric acid. It is white, crystalline powder or white, granular crystals, slightly deliquescent in moist air, freely soluble in water, practically insoluble in alcohol. Like citric acid, it has a sour taste.
Sodium citrates are used as acidity regulators in food and drinks, and also as emulsifiers for oils. They enable cheeses to melt without becoming greasy and also reduce the acidity of food.Sodium citrate is used as flavors, stabilizing agent, buffering agent, chelating agent, nutritional supplement of buttermilk, emulsifying agent and flavoring agent in food and beverage industry; it can be used as anti-blood clotting, apophlegmatisant and diuretics in pharmaceutical industry; it can replace sodium tripolyphosphate as a non-toxic detergent additives industry; it can also be used in brewing, injection, photography drugs, electroplating etc.
