Sodium lactate can be used as emulsifier, humectant, flavor enhancer, quality improver, antioxidant and pH regulator in meat processing, improving taste, preventing bacterial, and prolonging shelf life. As food preservative, flavor enhancer, anti freezing agent and humectant, sodium lactate is replacing sodium benzoate in food processing. Comparing with sodium benzoate, sodium citrate, sodium sorbate, sodium lactate has more advantages.
Sodium lactate is also widely used in pharmaceutical, and daily use chemicals.
