Maltitol powder is 85-95% as sweet as sucrose. It is with heat resistance, acid resistance, moisture retention and non-fermented features. Basically Maltitol powder does not have Maillard reaction. It can be not absorbed during digesting. It has low calorie, about 5% that of sucrose.
Maltitol powder is a sugar alcohol manufactured through hydrogenation of maltose from starch, available as white crystalline powder with a sweet taste.
