Sodium bicarbonate is a white solid crystalline powder. It has a slightly salty, alkaline taste. It is among the food additives encoded by EU. Since it has long been know and is widely used, the salt has many related names such as baking soda, bread soda, cooking soda and bicarbonate of soda.

Sodium bicarbonate(baking soda) is an inorganic salt used as a buffering agent and a pH adjuster. It also serves as a neutralizer. Sodium bicarbonate is primarily used in cooking, as leavening agent. It reacts with acidic components in dough, releasing carbon dioxide, which causes expansion of the dough and forms the characteristic texture and grain;
Industry use:
Sodium bicarbonate can be used to make soda-acid fire extinguisher and foam extinguisher; in rubber industry, it can be used in rubber and sponge production; in metallurgical industry, sodium bicarbonate is used as fluxing agent. Sodium bicarbonate can also be used in mechanical industry, printing and dyeing industry, etc.
