Fumaric acid appears as a colorless crystalline solid, soluble in water and ethanol. It is odorless with a special and strong sour, which is about 1.5times that of the citric acid.

Fumaric acid is an important kind of organic raw materials as well as intermediate of fine chemical products. Meanwhile, it is an important kind of maleic anhydride,  with wide applications ranging in food, coatings, resins and plasticizers.

Application

1 In food: as food acidulant, can be applied to soft drinks, western-style wines, cold drinks, fruit juice concentrate, canned fruit, pickles and ice cream;
As food antioxidant and flavoring agent used in processed meats, frozen seafood, smoked meats, etc
2 In industry: fumaric acid is used for the production of unsaturated polyester resin, such resins are characterized by good resistance to chemical corrosion, good heat resistance; fumaric acid and vinyl acetate copolymer is a good adhesive, and styrene copolymer is the manufacture of glass fiber reinforced plastic materials; fumaric acid obtained by plasticizers non-toxic, can be used for contact with food vinyl acetate latex.
3 Fumaric acid is used to add fragrance to products and to decrease product pH. It can also help to keep the pH stable. It is generally used in cleansers.
4 It is also used in pharmaceutical industry.
