Application
Sodium bicarbonate(baking soda) is an inorganic salt used as a buffering agent and a Ph adjuster. It also serves as a neutralizer. Sodium bicarbonate is primarily used in cooking, as leavening agent. It reacts with acidic components in dough, releasing carbon dioxide, which causes expansion of the dough and forms the characteristic texture and grain;
