Glyceryl monostearate is as food emulsifier and additives, as cosmetics and medicine mastic emulsifier, which can make the mastic fine and smooth; used as emulsifier and industry and textile industry; as lubricant and antistatic agent in plastic industry; and GMS also as defoamer, dispersant, thickener and humectant.
In food industry, the application details are:
1 Used in confectionery and chocolate, which can prevent the appearance of oil and grease in milk candy and toffee; prevent the crystallization of chocolate granulated sugar from oil and water and increase the sensitivity.
2 Used in ice cream. Ice cream tissue can be mixed uniformly, smooth, and delicate, improve dimension stability.
3 Used in margarine. GMS can prevent oil and water separation, stratification and other phenomena, improve the quality of the products.
4 Used in beverage. Added to protein beverage with fat, GMS can improve stability and prevent oil from floating and protein from sinking. As stabilizer in emulsion flavor.
5 Used in bread. GMS can improve dough texture, prevent bread from aging, mellow and expansion. Extend shelf life.
6 Used in pastry. Together with other emulsifier, it is used foaming agent.
7 Used in biscuits. Adding to the dough can make the oil dispersing evenly and prevent oil from seeking, which can keep the crispness.
