Potassium metabisulfite is colorless or white crystalline powder or granules, with sulfur dioxide smell. It is stable in dry air, but in moist air, it will release sulfur dioxide. Potassium metabisulphite is easily soluble in water, slightly soluble in alcohol, but insoluble in diethyl ether.
