Malic acid is an organic compound with the molecular formula C4H6O5. It contributes to the pleasantly sour taste of fruits, and is used as a food additive. Malic acid has two stereoisomeric forms(L- and D-enantiomers), though only the L-isomer exists naturally. Malic acid has a strong hygroscopic, soluble in water and ethanol.

In food production, DL-Malic acid is used as acidulant, color stabilizer, preservative and yolk's emulsifier. It is also used in medicine. Normally, it is recognized that L-Malic acid has important physiology function, but the D part in DL-malic acid does not have this effect.
In daily-use chemical industry: salts of malic acid used in tooth paste is anti dental calculus agent and resisting bacterium speckle. It can also be used deodorant and detergent.
